It's because of stuff like TBHQ that they are using. TBHQ is an anti-oxidant. It keeps fats from going rancid, so you see it in a lot of foods that they want to have a long shelf life (like Twinkies).

Alright, I am not here to criticize this guy, cause what he is doing is just bringing us knowledge. Now what I will say is this for all that say they won't eat there again. What you see here is just natural breakdown over time. What you don't see is how it breaks down in your stomache. That food is made with a lot of preservatives so of course it will stay good for while. But when that shit hits your stomache, it is a different story. Everything but gum breaks down in our stomache.

The fries are deep fried, a process which will sterilize them. The added salt further reduces microbial activity. Exposure to the environment was minimized with the packaging. Burgers were placed by hand, exposing them to bacteria on the guys hand. Fries were dumped into the jar with no hand contact. The shape of the fries offers a high surface area to mass ratio which would promote dehydration.

With all due respect to Mr. Spurlock, (no offence) but...his girlfriend or wife (not sure) is a vegan chef. He is a rather thin guy who obviously doesn´t eat very much during the day or at least only healthy stuff. Then he starts 30 days of McD´s diet. Hello..., why not take someone who never drinks alcohol and let him drink only Wodka for 2 days. Same thing. This someone would probably die. For some people Fast Food isn´t all that bad. The documentation is good and true but exaggerated.
